Asian healthy breakfast with Italian twist

Sometimes experiments on my kitchen lead to fantastic meals. This time I woke up with the idea to have a proper breakfast. I wanted something Asian inspired with Italian twist. I looked inside my fridge, weighted my options and came up with the idea of this amazing Omelet with Bok Choy, green peas and cherry tomatoes.

Ingredients

1 egg
100 grams of Chinese cabbage (Bok Choy or Pak-choi)
100 grams of Green peas
50 grams of Sesame seeds
½ teaspoon of Tamari sauce
1 Avocado
Spinach
3-4 cherry tomatoes
Sesame oil
Olive oil

Mix sesame and olive oils and pour into Wok pan. Once the oil warmed up, put inside the Wok chopped Bok Choy and green peas. Fry for several minutes before adding a pinch of red chili pepper, sesame seeds, and half of a teaspoon of Tamari sauce. Since the sauce is very concentrated and salty, you will not need additional salt or spices.
Now to the main part! Crack an egg into the pan, mix it fast and well with Bok Choy and green peas. Remove Wok from the heat, before you overcook it. It’s very important to keep the texture smooth and airy. You don’t want this omelet to be dry.

Serve your plate! Put the omelet to the round culinary form placed in the center of your plate. Cut avocado on tiny slices and decorate the omelet on top. Spinach and cherry tomatoes not only will bring a splash of color to your plate, but freshen up a meal itself.
