Autumn Pumpkin, Sweet Potatoes soup
Winter is coming… Finally, it is time to make warm and healthy soup with my favorite ingredients. This soup is full of vitamins and minerals. Besides, this soup is easy and quick to prepare. In short, perfect for those who like a sweet and savory taste.
You all been asking for this recipe, so here it is. Undoubtedly, my favorite Autumn pumpkin, sweet potatoes soup.
1/4 of Pumpkin
1 medium sweet potato
1/4 cup coconut milk
2 tablespoons ginger juice
1 teaspoon of Hemp seeds
How to cook:
First of all, for this amazing soup, you will need a pan and a blender.
Then, cut in medium pieces pumpkin and sweet potato. Add veggies and coriander seeds to a pan with 800 ml of water (apx.). Cook for 10-15 minutes high fire.
It must be noted, the key here is to not overcook your veggies! They have to be raw inside and slightly cooked outside in order to have fresher taste.
Once you are done, blend pumpkin and sweet potatoes in a high-speed blender, then slowly add the coconut milk, ginger juice, and salt and blend one more time. I always suggest first, to add a small amount of milk and broth, then taste, if you want more, add more. Take your time, do not rush.
Finally, serve your soup with hemp seeds.
