Carrot

I love carrot. Russians use it to cook different meals: salads, soups, pies. It is easier to say what we cook without carrot. The best carrots are medium sized, bright orange with green leaves. They are sweet and crunchy. You can peel it and use in salads or cut it as wedges and eat dipping in some kind of sauce or hummus.

Carrot contains a very important vitamin A. This is why it is great for your eyesight. To get your daily intake of Vitamin A, you need to eat 2 medium sized carrots. It absorbs better if you add some vegetable oil. Also carrot has lots of antioxidants.

You can make healthy juice with carrot by mixing it with other fruits like apples or vegetables like celery. Or you can use just carrot. Either way it will be delicious!
