Kale&Pumpkin soup

Autumn is the season of pumpkin. I personally love this orange vegetable not only because of it’s taste, but also thanks to it’s benefits for our health. To find out more about pumpkin please click here

Recently I bought pumpkin and decided to cook it, but didn’t know what I want to make. After several ideas I came up with this easy and quick option for lazy people, very fulfilling and excellent for those who want to loose weight. Take a note, this soup is a great option for people with diabetes.

Take a note: For my vegan kale&pumpkin soup you will need high speed blender.

Ingredients:

Add all ingredients with water to a saucepan. Cook on medium heat for 15-20 minutes. The key is not to overcook your veggies. Make sure they are slightly crispy.

When the vegetables are ready, take a ladle and carefully put it all into a blender. Mix it slowly for 30 seconds, add the broth from your vegetables. Add to the plate and decorate with parsley.  Your vegan kale&pumpkin soup is ready.
