Lentils with turnip and carrot by Maria Lopatova
A dear friend of mine, Masha Lopatova, shared this recipe with #lifeofthemodel while we talked about her story to success. You can read Masha’s interview here. So I decided to cook it at home, and, believe me, it’s good!
You will need:
- Green lentils
- Olive oil
- Dijon mustard
- Red wine vinegar
First pierce a turnip with cloves (7-10 pieces). In a pan boil your lentils, onion and a pierced turnip for 20-30 minutes until half done. At the same time, chop your carrots into small chunks and put it in a frying pan together with garlic and olive oil, cook for about 10 minutes. Prepare the sauce separately. In a bowl gently but thoroughly mix some olive oil, mustard, red wine vinegar, salt and pepper. Take your lentils and add the carrots, mix well. Add the sauce and close the lid. Turn off the heat and leave it for about 20 minutes. The lentils will absorb the sauce. You can eat it hot or cold, either is delicious.
