Magic salad by Elina Halimi

Quinoa is one of the main healthy product of today. Many people who follow healthy lifestyle find quinoa indispensable. It does not contain gluten, but full of useful proteins, folic acid, fiber and other valuable elements to the body. Nothing surprising that in recent years quinoa has become very popular among the population, especially among people who work in the fashion industry.

Today’s guest of Anastassia Khozissova, buyer and stylist Elina Halimi, also loves and appreciates the usefulness of quinoa. Therefore, our new recipe is for a salad with seasonal fruits, vegetables and quinoa. Salad is not only tasty, but full of useful nutrients. Anastassia and Elina agrees that with this salad you can replace a full meal, since it contains ingredients rich in protein, antioxidants and vitamins. So, it will help to satisfy your hunger, but keep the shape. No wonder we call it “magic” salad!

  • 200 g of Quinoa
  • 200 g of mixed greens (Spinach, Arugula, Iceberg lettuce, etc.)
  • 1 Carrot
  • ½ Beet
  • 200 g of Pumpkin
  • 1 Pomegranate
  • 1 Avocado
  • Beetroot sprouts
  • Handful of raspberries
  • 1 tablespoon of Olive oil
  • 1 tablespoon of Pumpkin seed oil
  • 1 tablespoon of Hemp oil
  • 1 teaspoon of lemon juice

First of all Elina Halimi recommends to cook quinoa before you start cooking the salad. Try to pre-soak quinoa for a few hours, this way it will cook just in 7-8 minutes.

Put mixed greens to a large bowl. Cut the carrots and beets into thin slices, like Anastassia and Elina shows you in the video. At the same cut the pumpkin into cubes and out it into hot oven for 15 minutes. Add beetroot sprouts, pomegranate seeds, a few raspberries and 4 tablespoons of quinoa to the bowl with mixed green.

Separately mix olive, hemp and pumpkin seed oils in a small saucer. Pour oil mixture to the salad and add the baked pumpkin. Thoroughly mix.

Cut the avocado and spread on a plate with salad. Done!

Bon appetite,
