Power salad with spinach and quinoa
Today I’m cooking for my beloved vegans. Simple salad full of minerals, proteins and fiber will help you to go through the day with a smile and positive mood.
The main ingredients here are spinach, quinoa and pumpkin. All ingredients are easy to find and even if you don’t have much time, you can pre-cook the bowl of quinoa and put it to the fridge and it will survive here for three days! Than just add quinoa to your salads.
The recipe of my salad is simple and it can easily become your go-to lunch. Just put it to the box and take it with you wherever you go.
Before you start making this salad, cook quinoa following the instructions on the box. Carefully wash spinach and put it to the bowl. Cut the raw pumpkin on small pieces and add it to the bowl with spinach. Than put raspberries to your salad and pumpkin seeds. And for a unique flavor I add just a little bit of turmeric powder. Last, but certainly not least, add quinoa. For dressing mix pumpkin oil and olive oil with freshly squeezed lemon juice and salt. Enjoy it!
